Toasted-Coconut Basmati Rice | |

Toasted-Coconut Basmati Rice is a light vegetarian dish. Basmati is an aromatic and long grained variety of rice. It takes approximately 25 minutes to make Toasted-Coconut Basmati Rice. The dish can serve 12 people. This recipe is ideal for a light lunch or as comfort food. The taste of cardamom blended with roasted coconut makes the dish an immediate mood enhancer.
The main ingredients required to make Toasted-Coconut Basmati Rice are basmati rice, almonds and unsweetened coconut. Water, cardamom and kosher salt are required for this dish. Take 2 ¼ cups of basmati rice and soak it in 3 cups of water for about 5 minutes.

Take ¾ cup each of slivered almonds and shredded unsweetened coconut. Gently crush 3 pods of cardamom. 4 ½ cups of water and 1 tablespoon of kosher salt are required to prepare this dish.
Boil the water in a large saucepan. Add the basmati rice, salt and crushed cardamom pods to the water and cover the saucepan. Cook the rice on low heat for 15 minutes. This will allow the rice to cook well and absorb the flavor of cardamom. Now remove the saucepan from the heat and let it stand for about 5 minutes. Do not remove the cover, as this will reduce the pressure in the pan and not let the rice cook well. Drain out any excess water from the rice in order to make the Toasted-Coconut Basmati Rice light and fluffy.
Place the almonds in a skillet and toast them over moderate heat till they are golden brown. This will take about the 5 minutes. Stir the almonds continuously in order to toast them evenly. When golden, transfer the almonds to a plate and allow them to cool. Put the shredded unsweetened coconut in the same skillet and toast it for about 4 minutes. Stir the coconut continuously so that it gets evenly toasted. Transfer it to the plate which contains the almonds and mix the two.
Place the rice in a large bowl. Fluff it with the help of a fork and discard the cardamom pods. Fluffing the rice will make it lighter and prevent the grains from sticking to each other. Now fold the toasted almonds and coconut into the basmati rice. Garnish the Toasted-Coconut Basmati Rice with some of the roasted almonds and cardamom powder.
