Toasted Wheat Berries with Pancetta and Roasted Apples

A delightful recipe-'Toasted Wheat Berries with Pancetta and Roasted Apples' is a perfect choice for a quiet evening meal at home with friends. Wheat berries have a particularly nutty flavor and are usually put in casseroles and pilafs. Pancetta, the Italian version of a bacon gives excellent flavoring to dishes in which it is used. This particular wheat berry recipe combines the nutty flavor of wheat berries with the crispy pancetta and the sweetness of apples.

The main ingredients that are used in the dish are the wheat berries-about one and half cups,half pound of sliced pancetta and Fuji apples that have been peeled and cut into wedges.5 Fuji apples will suffice for the dish. Other ingredients that are required include, 3 shallots and 3 cloves of garlic that have been thinly sliced, about half cup of parsley, 1 tablespoon of cider vinegar and 2 cups of apple cider. The dish is cooked using unsalted butter and olive oil.

To make 'Toasted Wheat Berries with Pancetta and Roasted Apples', first start off by toasting the wheat berries. They take about 5-6 minutes to toast. When they give out a nice aroma, add around 6 cups of water and put them to boil. After they have been cooked and removed from the flame, the berries need to cool down for 1 hour. Next, the pancetta needs to be baked until they become crisp and brown in color. The oven should be put at 350 degrees and baking should not take more than 20 minutes.

Use the excess fat, that come out after baking the pancettas, to cook the Fuji apples. Layering the apples with the pancetta fat, bake them in a baking tray for one and half hours or until they become soft. Now, take a medium saucepan and put 2 tablespoons of olive oil. Put the shallots and garlic and cook till soft. Drain the wheat berries and add them to the garlic and shallots. Pour 6 cups of water and cook on a low heat for 45 minutes. In a separate saucepan,pour the apple cider and cider vinegar and make a syrup by reducing them. Add 2 tablespoon of butter to it when done.

Finally all the ingredients are to mixed and combined together. Drain off the water from the wheat berries and pour down the cider syrup over them, mixing well. Next the pancetta, chopped into pieces and the Fuji apples are added. For seasoning use salt and pepper and garnish with parsley leaves. And the delicious 'Toasted Wheat Berries with Pancetta and Roasted Apples' is ready to serve.
