Miso Soup with Shrimp and Tofu | |

5 cups of water
1/4 cup of white or red miso
Salt
1 cup of frozen shelled edamame
4 ounces of baby spinach (4 cups)
3/4 pound of shelled and deveined medium shrimp, cut into 1/2-inch pieces
7 ounces of firm tofu, cut into 1/2-inch cubes
1 scallion that has been thinly sliced
Steamed short-grain rice and toasted sesame seeds, for serving
Method required in the preparation of Miso Soup with Shrimp and Tofu
In a small bowl, whisk a cup of water into miso. In a medium sized saucepan, boil water and add a small pinch of salt to it. Add the edamame, cover and leave it for cooking until miso becomes tender. This will take about about 5 minutes. Add the spinach in bunches and stir till it starts wilting. Next add in the shrimps and the tofu. Incorporate the miso mixture and add it to the soup. Simmer till the shrimps are full cooked. Add a pinch of salt to the soup and introduce the sliced scallion to it as well. Ladle the soup into deep bowls and serve it to the accompaniment of steamed rice and toasted sesame seeds as well.
