Pumpkin and Yellow Split Pea Soup is a healthy vegetarian soup which is a variation of the traditional pumpkin soup. It serves 12 people and takes less than half an hour of active time to make. The total time taken to prepare it is 4 hours. In Pumpkin and Yellow Split Pea Soup, pumpkin is added to a legume soup.
The ingredients needed to make Pumpkin and Yellow Split Pea Soup are yellow split peas, sugar pumpkin, and butter. Onion and garlic also go into the soup, which is seasoned with a number of spices. These include cumin, cayenne pepper, kosher salt and ground pepper. Serrano chili and fresh lemon juice add to the flavor of the soup.

Prepare the ingredients by peeling and cutting ¾ pound of sugar pumpkin into ¼ inch pieces. Butternut squash is a substitute for sugar pumpkin. 15 ounces of pumpkin puree and 8 ½ cups of water will be required to make the soup. Soak 2 cups of yellow split peas in water for 1 hour and then drain them. Dice 1 medium red onion into ¼ inch pieces and mince 4 garlic cloves. Mince 1 Serrano chili after taking out its seeds. 1 ½ tablespoons of cumin powder and ½ teaspoon of cayenne pepper will be needed to season the soup. 4 tablespoons of butter, 1 ½ tablespoons of lemon juice and 8 ½ cups of water are required to prepare the soup.
To make Pumpkin and Yellow Split Pea Soup, melt unsalted butter in a large pot. Put the onions in the pot and stir them with the butter. Add the chopped chili and garlic and cook with the onions over moderate heat for about 4 minutes. When the onions have softened, sprinkle the cumin and pepper and cook for 1 minute till the paste becomes fragrant. Now add the split peas and stir in the pumpkin puree. Bring it to boil, cover and cook over low heat for about 2 hours. Stir the ingredients from time to time.
When the peas become tender, add the diced pumpkin into the pot. Simmer the soup over moderate heat till the pumpkin becomes tender. Remove the pot from the heat and stir lemon juice into the soup. Season the Pumpkin and Yellow Split Pea Soup with pepper and salt. Serve it piping hot.
