Tortilla Broth | |

Tortilla Broth is a healthy and tasty soup, the key ingredients of which are corn tortillas and chicken broth. Tortilla is a flat, thin bread made of unleavened dough. Maize or corn flour are used to make this kind of bread. Tortilla Broth can be topped with a layer of shredded chicken or turkey, to enhance the flavor of the soup.
The main ingredients of Tortilla Broth are chicken stock, corn tortillas and tomato puree. Vegetable oil, garlic and onion are also needed to prepare the soup. Tortilla Broth is seasoned with chili powder, bay leaf, cayenne pepper, cumin powder and salt. Chop two corn tortillas which are about 6 inches thick. Mince 1 medium size onion. 3 tablespoons of vegetable oil, 3 garlic cloves, 1 tablespoon of chili powder and 1 bay leaf are needed for the broth. 1 cup of tomato puree, 5 cups of chicken stock and ½ a tablespoon of cumin powder are required to make the soup.

Heat the vegetable oil in a large saucepan. Put the garlic and chopped tortillas in the pan and cook over moderate heat. The tortillas should turn crisp and the color of the garlic change to a golden brown. This will take about 3 minutes. Stir the corn tortillas and garlic together so that the tortillas absorb the flavor of the garlic.
Put the minced onion into the pan and fold it into the tortillas. Now pour in the tomato puree and bring the mixture to a boil. Pour chicken stock into the pan and add the bay leaf, chili and cumin powders. Stir the soup well and bring it to a boil. Let it simmer over low heat for about 30 minutes. When the quantity of the soup has reduced to 1 quart, remove the bay leaf.
Make a smooth puree of the soup with the help of a blender. Season the Tortilla Broth with salt and a pinch of cayenne pepper. Garnish it with shredded chicken or turkey. You can even toss the shredded chicken with butter, salt and pepper in a shallow pan. Spread this on top of the Tortilla Broth to give it a unique flavor. The crispy shreds form a tasty variation to the creamy texture of the broth.
