Ingredients for Indian popcorn

1/3 cup of vegetable oil
2 serrano chilies, very thinly sliced
1 teaspoon of nigella seeds (also known as black onion seeds)
1.5 teaspoons of mild curry powder
4 medium shallots, very finely chopped
Kosher salt
3/4 cup of popcorn kernels

Directions

Put the vegetable oil on moderate flame in a large pan. Add the chilies and shallots to the oil and cook at a considerably higher temperature with occasional stirring. It generally takes 4-5 minutes before the chilies and shallots turn golden. Transfer the fried chilies and shallots to a paper towel for sieving the excess oil.

Nigella seeds and curry powder are to be toasted in the same pot for 1-2 minutes. Cover the pot after mixing the popcorn kernel to the baked curry powder and nigella seeds. Toss the mixture frequently so that it doesn’t get overcooked. Keep a low flame during the entire process. Stir as long as the kernels do not stop popping. Add a pinch of salt to the popcorn and take it to a bowl. Spread some chilies and shallots over the dried popcorn and serve hot.
