Texas Smoked Salmon Tartare

Ingredients required to prepare Texas Smoked Salmon Tartare

2 oil- packed anchowy fillets ( tiny Mediterranean fish usually available in canned or salted forms), properly drained and coarsely chopped
2 teaspoons of roasted garlic paste
1 teaspoon of ground cumin
1tablespoon of extra- virgin olive oil
½ cup of sour cream
2 teaspoons of fresh lime juice
One ½ pound of skinless smoked salmon that has been cut into1/4- inch dice
1 small jalapeño that has been seeded and minced
¼ cup of finely chopped red onion
1 tablespoon of capers that has been drained and coarsely chopped
1 tablespoon of finely chopped cilantro and four 4 dozen of cilantro leaves, for the purpose of garnishing.
Salt and freshly ground pepper
4 dozen sturdy of corn tortilla chips
Method of Preperation

Take a medium- sized bowl. Use the back of a fork and start mashing the anchovies along with the other ingredients- namely the roasted garlic paste, cumin and extra- virgin olive oil. Stir in the sour cream and lime juice. Fold in the smoked salmon, jalapeño, red onion, capers and the chopped cilantro. Then season the mixture with salt and pepper. Arrange the tortilla chips on a platter. Put a spoonful of smoked salmon tartare( sauces ) on the tortillas ( fried corn snacks). Top the tortillas with a cilantro leaf. Serve. Note you can cool the snack to room temperature before serving. You cam make your own garlic sauce too.
