Ingredients required to prepare Winter Squash and Gouda Croquettes
1 tablespoon extra-virgin olive oil
One 2-pound winter squash, such as butternut, split lengthwise
1 pound small sweet potatoes, split lengthwise
6 large egg yolks
1 large egg, beaten
1 cup finely shredded aged Gouda
1 teaspoon thyme
Salt and freshly ground pepper
3 tablespoons water
1 ½ cups all-purpose flour
1 ½ cups plain dried bread crumbs
Vegetable oil, for frying
Bitter Orange Compote, for serving

Winter Squash is a vegetable with hard outer rind.
Method of preparing Winter Squash and Gouda Croquettes
Pre- heat an oven to 400''. Drizzle olive oil on a baking sheet. Roast the squash and sweet potatoes till they become tender and of a brownish colour. Leave them for cooling.
Mash the pulp of the squash and the potato. Add the egg yolk, the whole egg, cheese, thyme ( seasoning agent), 1teaspoon of salt,1/4 teaspoon of pepper. Chill.
Beat 4 egg yolks with water. Season bread crumbs with salt and pepper. Mix the Croquette mixture in flour. Further roll them into the shape of balls. Dip into the egg mixture. Coat with bread crumbs.
Leave the Croquette for about 10 minutes at room temperature so that they could become firm.
Heat vegetable oil to 350''. Fry the Croquettes at an high temperature. Fry till golden brown. Serve with Bitter orange Compote.
