African cooking is often based on meat, fish-, fowl-, and dairy products. For most of the Africans the ideal meal habit revolves around non vegetarian dishes. People in Africa love to red meat but do eat fish and seafood or even chicken. Some of the vegetarian food and wine recipes in Africa usually followed are given as follows:
Mafe: Mafe is a traditional dish of the Wolof people of Senegal and Gambia and it is one of the different variations of Africa. The dish is often prepared with lamb or mutton it can also be made with fowl, fish or in a vegetarian version.

The basic Mafé recipe is prepared by meat, onion, oil, tomato paste, peanut, a vegetable or two, chile pepper, salt, black pepper, and water. The ingredients required for making this dish include the following
1 spoonful of cooking oil, to sauté meat and onions
One or two pounds of lamb or mutton
One or two finely chopped onions
Two tablespoons tomato paste or a tomato sauce can
Two to four peeled tomatoes, if desired
Salt and black pepper
One hot Chile pepper, or ground red pepper
One or more chopped vegetables like cabbage, carrot, sweet cassava tuber, eggplant Maggi cube or Maggi sauce
One cup peanut butter or homemade peanut butter made from two cups of peanuts
One or two cups water, or beef broth or stock
Begin cooking this delicacy of Africa, by removing the peanut shells. Now roast the peanuts or a baking sheet in oven or in a fry pan. Keep on stiring until they remov the skin. Crush peanuts with a potato-masher or with a mortar and pestle. Now heat some oil in a large pan and stir fry the meat and onions over high heat. Reduce heat and simmer for a few minutes. Now add all the left ingredients leaving only the peanut butter and water. Simmer the thick mass until all ingredients become soft enough. Add water if it becomes completely dry. Add water or beef broth as needed to make a smooth sauce and serve with rice.
Clementines in Ginger Syrup: Clementines in ginger syrup is a popular African wine recipe, to prepare the clementines in ginger syrup, following ingredients are required:
1 cup sugar
1 1/2 cups water
1/4 cup thinly sliced peeled ginger
3 whole star anise
4 green cardamom pods
1/2 cup pomegranate seeds
6 clementines or mandarin oranges
Directions for making:
Take some water, sugar, ginger, cardamom, and star anise to a boil in a small saucepan over medium-high heat. Saute this mixture until sugar has dissolved, then simmer, uncovered, stirring irregularly for 10 minutes. Now remove from heat and let sheer, covered, 15 minutes. Strain the syrup with a strainer into a bowl, discarding solids. Cover the thick mass for at least 2 hours.
Cut and peel from clementines, taking all white seeds, with a sharp knife. Now cut fruit into 1/4-inch-thick rounds and put in a serving bowl. Add syrup and chill, covered, at least 1 hour. To garnish right before serving, sprinkle some pomegranate seeds.
